Pyaaji Aloo
Ingredients:
- Boiled potatoes peeled and diced 3-4 / Uble aloo
- Finely Chopped onion 2 medium-size / Pyaaj
- Chopped green chillies 1 Tbsp / Hari Mirch
- Grated ginger 1 tbsp / Adarak
- Cumin seed 1/2 tspn / Jeera
- Dry red chillies 2 / Sukhi Lal Mirch
- Aloo dum masala 1 tsp ( you can use other masala if this is not available)
- Red chilli powder 1 tspn / Lal Mirch Powder
- Salt to taste
- Mustard oil (Any other cooking oil)
- Chopped coriander leaves / Dhaniya Patti
Method:
1. Heat oil in pan. After heating add dry red chillies and jeera.
2. Then add chopped chillies, ginger and onion and saute till onion turns light brown.
3. After this, add all the dry spices and mix it well.
4. Now add boiled potatoes and mix it on high flame for a minute or two so as to get little crisp potatoes.
5. After cooking it for 5-6 minutes , switch off the flame.
6. Garnish it with coriander leaves and serve with ajwain poori.
