Pyaaji Aloo is very interesting and easy recipe . It's very easy to prepare . Its mainly dry curry of boiled potatoes cooked with lots of onion and special spices. Aloo dum masala is easily available in market which enhances the taste of this curry. You can have it with paratha or puri but according to my choice it tastes best with ajwain ki pudi. Hope you will  try this out and  let me know how it came out. Here goes the recipe:

Ingredients: 



  1. Boiled potatoes peeled and diced 3-4 / Uble aloo 
  2. Finely Chopped onion 2 medium-size / Pyaaj
  3. Chopped green chillies 1 Tbsp / Hari Mirch
  4. Grated ginger 1 tbsp / Adarak
  5. Cumin seed  1/2 tspn / Jeera
  6. Dry red chillies 2 / Sukhi Lal Mirch
  7. Aloo dum masala 1 tsp ( you can use other masala if this is not available)
  8. Red chilli powder 1 tspn / Lal Mirch Powder
  9. Salt to taste
  10. Mustard oil (Any other cooking oil)
  11. Chopped coriander leaves / Dhaniya Patti


Method: 


1. Heat oil in pan. After heating add dry red chillies and jeera.

2. Then add chopped chillies, ginger and onion and saute till onion turns light brown.
3. After this, add all the dry spices and mix it well. 
4. Now add boiled potatoes and mix it on high flame for a minute or two so as to get little crisp potatoes. 
5. After cooking it for 5-6 minutes , switch off the flame.

6. Garnish it with coriander leaves and serve with ajwain poori.
