2 Min Eggless Mango Cake

Hello everyone..This is the season of King of Fruits "Mango". I love mangoes. I keep on experimenting in the kitchen. This time I have tried to prepare a quick dessert and the outcome was awesome. So, today I am going to share a quick and easy "2 min Instant Eggless Mango Cake". Its very easy to prepare. You can prepare and serve it anytime. I have prepared 2 bowls of cake with this mixture and kept the second bowl for hubby. When he came home in the evening, then I microwave this cake for another 15 sec and it becomes soft again to be served. I have prepared the video recipe (HINDI)  for the same for easy understanding of the method. So checkout the video link given at the end of the post. I hope you will try this out and let me know how it came out. Here goes the recipe:

Preparation Time: 10 min
Cooking Time: 2 min
Serving: 2

Ingredients:

  • All Purpose flour / Maida - 4 tbsp
  • Sugar powdered- 4 tbsp
  • Baking Powder - 1/2 tsp
  • Baking Soda - 1/4 tsp
  • Mango Puree - 4 tbsp
  • Oil - 1 tsp
  • Milk - 4 tbsp
  • Vanilla Extract - few drops
  • Grated Chocolate and gems for plating (You can choose chocolate chips /nuts etc.)


Method:

  • In a bowl, add all the wet ingredients milk, oil, vanilla and 3 tbsp mango pulp.
  • Then add all the dry ingredients flour, sugar, baking powder and baking soda.
  • Mix everything well and add chocolate chips/nuts.
  • Transfer this mix in a microwave safe bowl and microwave for 2 minutes. I checked the mix after 90 seconds, it was little wet so left for another 30 seconds.
  • Take out the mango cake.
  • Now pour the leftover 1 tbsp mango pulp on the cake and smoothen it.
  • Then sprinkle grated chocolates and put few gems on it.
  • Now you yummy instant mango cake is ready to serve.


Tips:

  • Keep checking cake at 90 sec and after 2 min. Insert a toothpick in the cake, if it comes out clean then your cake is ready. Do not overbake. If you over bake, it will be rubbery.
  • I pulsed granulated sugar in the blender so it will dissolve easily.
  • It its not done in 2 minutes, leave it for another 10 seconds.
  • You can use any other fruit puree other than mango too.
  • Mix gently . Mixing too much can make the cake hard.
  • Do not add too much mango pulp otherwise it will become soggy.
