Egg Curry

Hello everyone..Today I am going to share recipe of a very interesting food item. Egg.. It's one of my favorite food item. It can be used in almost everything to prepare anything..whether you talk about breakfast, lunch, hi tea, snacks or dinner..it can be experimented in various ways. You can prepare healthy boiled eggs to lip smacking egg curry..Egg are prepared in different styles in different regions.Some like it to be quick , delicious and the typical Indian spicy kind and some like creamy mild curry. So today I am going to share very simple recipe of egg curry. You can go through my video recipe in HINDI by just clicking the video link given at the end of the post. I hope you will try this out and let me know how it came out. Here goes the recipe:

Preparation Time: 15 Min
Cooking Time: 25 Min
Serving: 5

Ingredients:

  • 4 medium size peeled and diced potatoes / aloo
  • 5 Eggs boiled and peeled
  • 1 cup paste of :
  •   2-3 medium size onion + 1/2 inch ginger + 8-10 garlic cloves + 4-5 green chillies
  • 2 medium size tomatoes (finely chopped or make paste)
  • 1.5 tsp garam masala
  • 1 tsp turmeric powder
  • 1 tsp coriander powder
  • 1 tsp red chili powder(varies according to taste)
  • Salt to taste
  • Mustard oil or any other cooking oil for frying and cooking ( taste best with mustard oil)
  • Coriander leaves chopped for garnishing



Method:

 How to boil eggs?

  • Add eggs to a pot along with water enough to immerse them.Bring them to rolling boil on a medium flame.After few minutes, check the eggs if the shells look cracked,switch off the flame.After 10 minutes , remove the shells and discard. 

Egg Curry Recipe:

  • Heat oil in pan enough to fry the eggs and potatoes. Deep fry them till it turns golden and keep it aside.
  • Now heat oil in another pan and add onion paste and cook for 2-3 minutes.
  • After that add all the dry spices , mix well and cook it for another 5 minutes.
  • Then add tomato paste along with salt and cover it and cook till masala start leaving oil.
  •  Stir it occasionally so that masala doesn't stick at bottom.
  •  When masala is cooked properly, then add fried potatoes and eggs & mix gently to evenly coat them with masala.
  • Then add 2 cup water and stir well. Quantity of water can be increased or decreased for thin or thick gravy.Cook until the gravy thickens slightly and the curry is cooked completely. Garnish with coriander leaves.
  • Egg curry is ready to serve with rice or roti. 

Tips:

1. You can make paste of onion and tomato together if you fall short of time. But sauteing them separately yields a better tasting gravy in this recipe.

2. You can coat the boiled eggs in paste of cornflour + water and then fry them.
