Aloo Parwal Bhujiya (Dry Curry of Potato and Pointed Gourds)
Here goes the recipe:
Ingredients:
1.Parwal/Pointed Gourds - 3 medium size (Sliced neither very thin nor thick)
2.Potatoes - 2-3 Medium Size (Sliced neither very thin nor thick) Mangoes
3.Green Chillies - 3-4 (finely chopped)
4.Jeera Or Cumin Seeds - 1/4 tea spoon
5. Red chilli powder or lal mirch powder -1/4 tea spoon
6. Turmeric powder or haldi powder - 1/4 tea spoon
7. Cooking Oil - as required (Personally I prefer Mustard oil )

8. Kalonji Masala Powder (optional) Or any another sabji/ curry masala powder - 1/4 tea spoon
9. Amchur Or Dry Mango Powder -1/4 tea spoon (Quantity varies as required)
10. Salt - To taste
Method:
1.Peel and slice the potatoes and parwal neither very thin nor very thick.
2. Heat oil in a wok or pan.

2. Heat oil in a wok or pan.
3. When oil heats then add jeera and let it crackle.
4. After that add chopped green chillies, sliced potatoes and parwal, fry till it turns light golden brown.
5. Now add turmeric powder and salt , cook it till its 90% done.
6. Now add all dry spices and mix it well for 3-4 minutes.
7. Switch off flame and cover the wok/pan for few minutes.
8. Yummy bhujiya is ready to serve.
Notes:
1. I have shared a very basic recipe..you can add chopped onions and tomato for more rich taste.
