Besan Sev Namkeen (Gram Flour Snacks) 

Hello everyone..How are you all? I am back with another yummy and lip smacking snacks recipe... It's basically recipe of my Maa. From long time I was craving for this and finally I made it. It's really very interesting and tasty recipe. 
Besan Sev is bascially a cruncy snack prepared from Gram flour mixed with spices. It can be enjoyed anytime and can be stored for a couple of months.
For this you require a Sev Maker ( pic has been shared at the end of the post).It is easily available and helpful in preparing variety of snacks. Do buy one for you.

Here goes the recipe:

Ingredients:
  • 2 Cup Gram Flour (Besan)
  • 1/4 tspn Red Chilli Powder
  • 1/8 tspn Turmeric Powder
  • A pinch of Baking Soda (optional) 
  • 1 tspn carom seeds(ajwain) / mangrail seeds
  • 1-2 tbspn Ghee/Oil
  • Salt to taste
  • Oil for frying

Method:

1. To prepare this sev, sieve besan and keep aside. 
2. Now add all ingredients with besan (except oil for frying) and mix well so that it looks like bread crumbs texture. 
3. After that start kneading dough by slowly adding lukewarm water . 
4. Dough should be soft and smooth. If it's sticky then add more besan Or if it's hard then add little water.
5. Then cover the dough with wet kitchen towel and keep it for 10-15 minutes. 
6. After that remove towel and knead again for a minute. 
7. Now heat oil in a wok and meanwhile grease the sev maker with oil so that dough doesn't stick much in sev maker. 
8. Then roll the dough in log and stuff it in sev maker and cover it with lid properly. 
9. Check the heat of oil in wok by putting a tiny piece of dough in it, if it comes up gradually and steadily then it's ready to fry. 
10. Now put sev in wok with the help of sev maker, move it in circular motion so that dough spread equally in wok. 
11. Fry the sev from both sides till it turns golden brown and crispy from both sides. 
12. After that take the sev out on paper towel to drain excess oil and make sev from remaining dough in the same way. 
13. Let the fried sev cool down at room temperature. 
14. Now break the sev and store in air tight container. It can last for a couple of months.
